Locally-owned La Collina Pizza was established in Fort Collins, CO in 2001. We are located at 130 “D” W. Olive St., Fort Collins, CO 80524 (970) 493-4574. Our customers order pizza for delivery or pickup, and many prefer to dine-in to enjoy their pizza fresh from the oven accompanied by a beer or a glass of wine. All the dishes we serve are hand-made to order from scratch using the freshest ingredients available.
Be sure to check out our menu page for the best Italian-style pizzas, calzones and pastas in town. We also offer a variety of sandwiches and salads. And don’t forget the yummy sides of garlic bread or cheese bread. For deserts we have a creamy Italian tiramisu and a decadent chocolate mousse.
I’m taking some photos and videos of our family-owned restaurant and also of how we make pizza. I will upload them to this website as soon as they are ready, so keep checking!

ABOUT THE PIZZA MAKER:
My name is Sadek, owner of Pizzeria La Collina. I learned all the basics of cooking in Italy working in restaurants ranging from 5-star hotels to small family-owned joints. Despite learning so much from different chefs, there was one mentor that influenced me more than anyone else. He is Signor Mario, a true Neapolitan maestro. He taught me all the ins and outs of the art of pizza making. I call him word Maestro because:
The word “chef” does not do him justice.
We worked together in the small town of Assisi – a picturesque hill town in the Umbrian region of Italy. If Mario ever caught a glimpse of me taking short cuts or delivering less than the best, he would become furious, swearing, and then murmuring: “Oh, Dio, perdona me” (God, forgive me).
To this day I hear his voice saying “basil is a very delicate herb, never beat it up with too much chopping” or “when you make the dough… don’t mix the salt closely with the yeast because the salt kills the yeast and reduces its power.”
But most importantly, he insisted on using only the Best Of The Best of all the ingredients available to create his masterpieces.
Imagine a pizza just pulled from the oven, piping hot…the aroma of the sauce and cheese fills the air …the laughter of good friends and family getting together…the clinking of wine and beer glasses… as everyone devours slice after slice of Mario’s extraordinary pizza.
This is the perfect pizza!

HOW DO WE MAKE OUR PIZZA TODAY?
Our pizza is the true “Italian Style Pizza”, stretched thin by hand and baked crispy on a stone deck oven.
What’s in our pizza:
We start everyday by making fresh dough and fresh sauces, we use excellent quality mozzarella cheese, and fresh cut vegetables for toppings and salads. We mix and roll our meatballs by hand before cooking them. We cook our Italian sausage fresh (many pizzerias buy pre-cooked frozen sausage and meatballs). We roast the red peppers, cut them and marinate them. The fresh spinach is washed by hand over 20 times to make sure is clean, then we sauté it in olive oil and garlic. The tomatoes are diced and marinated in olive oil, garlic and basil. We use gourmet topping such as sundried tomatoes, eggplants, salami, provolone cheese, artichoke hearts and a top quality imported olive oil.
What’s NOT in our pizza:
We don’t use corn syrup, additives, preservatives, lard, artificial flavoring, coloring, or MSG. All our food is Trans Fat Free.
